Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Banana Gingerbread Cake with Vanilla Glaze

To use them up, this time I chose to do a banana gingerbread cake. It was great!






Banana Gingerbread Cake with Vanilla Glaze

Makes 24 servings

Ingredients
For the Cake
  • 2 large ripe bananas, mashed
  • 1/4 cup 2% milk
  • 1/2 cup avocado (or other flavourless) oil
  • 1/2 cup molasses
  • 2 large eggs
  • 2/3 cup packed brown sugar
  • 2 cups all purpose flour
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 teaspoons baking soda
For the Glaze
  • 1 tablespoon 2% milk
  • 1 teaspoon vanilla
  • 1 tablespoon melted butter
  • 1 tablespoon maple or corn syrup
  • 1 1/2 cups confectioners sugar
Directions
  1. Preheat the oven to 325F. Spray and flour a 9x13 cake pan (or a loaf pan).
  2. Combine  bananas, milk, oil, molasses, eggs and sugar in a bowl. Whisk until well combined.
  3. Combine flour, ginger, cinnamon, salt and baking soda and stir into the wet mixture just until combined.
  4. Pour the mixture into the prepared pan and bake for about 30 minutes or until a tester comes out clean.
  5. Cool the cake completely before adding the glaze.
  6. To make the glaze, simply mix all the glaze ingredients in a bowl, and spread over the cake. You can add more milk or sugar depending on how thick you want your glaze to be.
