Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Healthier Banana Chocolate Chip Muffins Made with Applesauce

I wasn't sure if this was going to work or not because I don't normally bake with applesauce, but I thought what the heck, it's worth a try. So here's what I came up with. They were pretty good!





Healthier Banana Chocolate Chip Muffins Made with Applesauce
Makes 8 muffins

Ingredients
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1/4 cup sugar (or 1/2 cup if you like it sweeter)
  • 1 large egg
  • 1/4 cup 2% milk
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 medium ripe bananas, mashed
  • 1/4 cup milk chocolate chips
Directions
  1. Preheat the oven to 350F and spray a silicone muffin pan with cooking spray.
  2. In a bowl, combine flour, baking soda, salt and sugar with a whisk.
  3. In a measuring cup, measure out the milk then add the egg, applesauce and vanilla. Beat it up with a fork until well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients, and add the mashed bananas. Mix it all together with a rubber spatula just until combined, then stir in the chocolate chips.
  5. Divide the batter among 8 muffin cups and bake for 20 minutes, or until a tester comes out clean. Place on a wire rack to cool.
Tips:
  1. You can add nuts if you wish.
  2. I put a banana chip on top to make it look nice but it's optional.
