Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Sugar Cookie Cutouts

Here's a great recipe for rolled sugar cookie cutouts. Kids love to decorate these (and eat them) and they add a splash of colour to your Christmas cookie tray. Just make sure they wash their hands and don't lick their fingers if you're planning on giving them away, because nobody wants to eat pre-licked cookies. Gross.







Sugar Cookie Cutouts
Makes about 25-30 cookies

Ingredients
  • 2 cups all-purpose flour, plus more for rolling
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • icing in different colours
  • sprinkles, coloured sugars and candies for decorating
Directions
  1. Combine flour, baking powder and salt. Set aside.
  2. Beat butter and sugar on medium speed until fluffy. Add egg and vanilla and mix well.
  3. Add the flour and mix with a wooden spoon until it forms a ball.
  4. Wrap in plastic and put the dough in the freezer for about 20 minutes.
  5. Preheat the oven to 325F. Line a baking sheet with parchment paper and remove the dough from the freezer. Let the dough stand for 5 minutes then roll out to 1/8" thick. Use flour to prevent the dough from sticking to the counter and the rolling pin.
  6. Use cookie cutters to cut out shapes, then transfer them to the cookie sheet. Bake for about 10 minutes or until the edges start to turn golden. Transfer to a wire rack and cool completely before decorating.
  7. To make the icing, mix powdered sugar with a few teaspoons of milk. Add more or less sugar depending on how thick you want your icing. You can use food colouring if you like. Pipe or spoon the icing onto the cookies and decorate with sprinkles and candies.

  2. I made the Cookies from this recipe yesterday between me and my wife we ended up finishing the plate! they are truly lovely.. Dont think i will be making them again any time soon though they are way to addictive! i will end up having to buy all my clothes from www.biggerland.co.uk
